What to do with those pumpkin seeds - make homemade organic pumpkin seed treats

These are great for all those extra seeds you have during Halloween, and a healthier treat for kids.

Pumpkin Seed Bars:


Grab...

1 and 1/2 cups of organic pumpkin seeds
1/2 cup of organic dried cranberries
1/2 teaspoon pure vanilla or orange extract
5 tablespoons organic honey

Mix your seeds and berries in one bowl. In a second bowl mix the organic honey and extract. Mix the seeds and berries into the honey mix until well combined. Coat a basic loaf pan - square or round, with a smidgen of organic butter then press the seed mixture in.


Chill for at least a few hours but it's better if you chill overnight. Cut into pieces and serve.

This treat is tasty and portable - great for Halloween parties. You can also try it with other dried fruit instead of cranberries like apples or blueberries and even add a dash of cinnamon and nutmeg. My son liked these a lot and he doesn’t normally like seed-type stuff like trail mix.

That looks like a great recipe.  Some friends of mine had a pumpkin carving party and used organic pumpkins from Whole Foods.  They took some of the seeds and baked them with a little salt, cayenne, and I think maybe some other spices.  For a little snacker, they were really quite good.

Yeah, I like pumpkin seeds plain too - but get a little tired of them, this is one good alternative.
