This is a Whole Foods recipe I got a long time ago in Fitness Magazine. It wasn't organic, but I mixed it up and my son loves it.
To make: Blend everything except the ice until smooth. Add ice. Blend more, until thick and creamy. Garnish with toppings.
- 1 cup organic canned pumpkin
- 1 cup organic milk (you can use soy, or another milk as well, it works fine)
- 2 tablespoons pure maple syrup (we've also used Fair Trade honey, but remember, kids under one year can't have honey, so only switch it for older kids)
- 1/3 teaspoon nutmeg
- 2/3 teaspoon cinnamon
- 1 teaspoon pure vanilla extract
- 1 cup ice
- Whipped cream, cinnamon, nutmeg, shaved Fair Trade chocolate for toppings (your choice - or go topping free).
